The brown rice kheer enhanced with Indian spices like saffron makes for a healthy and delicious treat. The brown rice breaks down much better than white giving the kheer a lovely creamy texture. Brown rice is very nutrient-dense with a high amount of dietary fibre. It can be consumed by people on a weight loss diet too.
Soak brown rice in warm water for 2-3 hours. (Soaking reduces the cooking time)
Now add water and cook the brown rice.
In a pan add milk and brown rice and cook it for 15 minutes. Keep stirring it in between so that it doesn't stick to the bottom.
Add sugar and cardamom powder and stir well till the kheer thickens. Mix saffron with 2 tablespoons of milk and add it to the kheer and mix well and turn off the flame.
Garnish it with almonds (optional). Serve hot or chilled.
