Diwali healthy recipe: Brown rice kheer

The brown rice kheer enhanced with Indian spices like saffron makes for a healthy and delicious treat. The brown rice breaks down much better than white giving the kheer a lovely creamy texture. Brown rice is very nutrient-dense with a high amount of dietary fibre. It can be consumed by people on a weight loss diet too.

Ingredients

  • cup brown rice
  • 3 cups skim milk
  • cup sugar
  • 1 teaspoon cardamom powder
  • Pinch of saffron strands

Method

  • Soak brown rice in warm water for 2-3 hours. (Soaking reduces the cooking time)
  • Now add water and cook the brown rice.
  • In a pan add milk and brown rice and cook it for 15 minutes. Keep stirring it in between so that it doesn't stick to the bottom.
  • Add sugar and cardamom powder and stir well till the kheer thickens. Mix saffron with 2 tablespoons of milk and add it to the kheer and mix well and turn off the flame.
  • Garnish it with almonds (optional). Serve hot or chilled.
