Spicy, wholesome and tasty, this chicken curry is a hit with everyone in my family too. Chicken is a source of minerals like phosphorous and calcium and selenium which help to keep our bones healthy. 1. Marinate the chicken in the marinade ingredients and keep the chicken aside for about 1 hour in the fridge.
2. Meanwhile, dry roast grated coconut and keep aside. Then pour oil into a pan and fry onions till they almost brown. In the same pan, add the rest of the masala paste ingredients till you get the aroma of the spices. Let it cool.
3. Combine spice and onion mixture with coconut and whisk it in a grinder with some water to make a thick paste.
4. For the curry, pour some oil in a pan and fry onions till they are brown. Add the chicken and cook it for about 15 minutes.
5. Add the masala paste and make sure to coat all the chicken pieces with it. Add water and salt.
6. Let the chicken cook completely.
7. About 5 minutes before taking it off the flame, add powdered cinnamon and mix.
8. Garnish with chopped coriander, squeeze lemon juice and serve the chicken curry with chapati or rice.
