Ingredients:
You may like to read
440 grams / 2 cups Sabudana before soaking
450 ml/ 2 cups water
2 tablespoons oil
1 teaspoon cumin seeds
3-4 curry leaves
tablespoon grated ginger
2 green chillies, finely chopped
2 medium-sized potatoes, peeled and cubed / 2 cups approx
cup roughly crushed roasted peanuts
Salt to taste, sendha namak for upvaas
2 teaspoons Sugar
1 tablespoon Lemon juice or to taste
Fistful of Chopped cilantro
A few roasted peanuts for garnish
Instructions:
Start by washing your Sabudana under cold tap water to remove starch and prevent sticking
Soak Sabudana in inch water of more than the sabudana level
Let it soak overnight or for at least 5-6 hours to allow Sabudana to fluff up
Take your heavy-bottom non-stick pan and add oil
Once the oil is hot enough, add in the cumin seeds, cubed potatoes and cook on a low flame
As the potatoes become tender, add in the curry leaves, ginger, chopped chillies, and cook for a minute more
Meanwhile, mix the soaked Sabudana with sugar, salt, peanuts and lemon juice
Once the Sabudana is ready, cook the khichdi mix until it becomes a bit translucent and well-coated.
