Healthy recipe: Paneer bhurji sandwich for breakfast

A sandwich is a life saver when you are pressed for time when you to rush to the office in the morning or pack tiffin for your kids or reach home late due to work. Having sandwich can make you feel full and also prevent you from bingeing on junk. But eating the same old vegetable sandwich or toast sandwich for breakfast is boring. Try this quick paneer bhurji sandwich recipe that will take you not more than 15 minutes and can serve two. Here’s what you need and how you can make this tasty and healthy paneer sandwich a home. Bread slices – 4 (brown bread or whole wheat bread)

Onion – 1 (medium sized and slice it into rings )

Tomato – 1 (medium sized and thinly cut into rings)

Paneer – 200 gms

Ghee/oil – 1 tablespoon

Salt (as per taste)

Cumin seeds (jeera) – 1/2 teaspoon

Garlic/ ginger – 1/2 teaspoon (finely chopped)

Turmeric (haldi) powder – 1/8th teaspoon

Red chilli powder – Half a teaspoon

Garam Masala powder – 1/4th teaspoon

Amchur powder – 1/4th teaspoon

Coriander leaves (finely chopped) – 1 tablespoon

Steps to prepare:

1. Heat oil/ghee in a pan over a low flame. Add cumin seeds, ginger and garlic. Saute till cumin seeds start to splutter and garlic turns slightly dark in colour.

2. Add crumbled paneer, red chilli powder, turmeric powder, garam masala and salt. Switch off the stove and mix all the ingredients. Now add coriander leaves and amchur powder, mix well. Paneer bhurji is ready. Also try these 6 tasty, low-calorie paneer recipes!

3. Slice the edges of the bread and apply butter over it on one side. Now add a spoonful or two of paneer bhurji and spread it over the slice.

4.Place one or two onions slice and tomato slices over it. Cover it with another slice of bread with edges cut.

5. Place the slices in a toaster or grill it. If you do not have toaster or griller, you can even use a pan. Take a pan, smear butter or ghee and place the slices over the pan and allow it to turn golden brown by heating over a low flame. Serve hot with tomato ketchup or coconut chutney.
