Getting my three year old to eat vegetables is an impossible task. I think that's the case with most children who eat non-vegetarian food. She'll happily eat chicken and fish dishes, but give her vegetables and she'll turn her nose up. She is such a picky eater that when it comes to vegetables, she doesn't even eat pizza! That is why, I am game for any recipe that promises to make her eat vegetables. I love this recipe absolutely. It disguises the vegetables really well. The chicken and cheese make for a great combination. I sometimes make bigger patties with the mix and put it into mini-burger sliders that I pack for her snack for school. I have had positive feedback from the children that she shares her snacks with and a lot of mothers have asked me to share this recipe with them. Try it out and you won't be disappointed.

Ingredients

  • Chicken, boneless - 1 cup
  • Ginger and garlic paste - 1 tsp.
  • Mixed vegetables, chopped - 1 cup
  • Goat cheese - 2 cubes
  • Rice flour - 1/2 cup
  • Bread crumbs - 1 cup
  • Egg - 1
  • Seasoning - salt, black pepper, garlic powder and oregano
  • Oil for greasing the pan

  • Cut your boneless chicken in small cubes and put it for boiling. Add a little salt and the ginger-garlic paste when boiling the chicken.
  • When completely cooked, let the chicken pieces cool down. Grind it in a mixer to mince it.
  • Get your vegetables like carrot, bell peppers, broccoli, zuchini, cauliflower and potato and chop it into really tiny pieces. If your toddler doesn't do good with textures, you can also blitz the veggies in a blender to make it paste-like.
  • Mix the chicken and vegetables and give it a quick mix. Now add the egg and rice flour, seasoning and grated goat cheese. Mix it all together. It should be a sticky dough-like.
  • Oil your palms so that the mix doesn't stick to your hands. Take a little of the mix on your hands and roll it into a ball. Then press it to flatten it and make a bite size patty.
  • Make patties out of all the mix.
  • Heat a girdle pan on high heat and drizzle a little oil on it.
  • Coat each individual patty in bread crumbs and shallow fry it on the pan. Cook on both the sides till its golden brown.
  • Serve warm.
