Healthy recipe: Cabbage and tomato soup

Winter is here and all of us are thinking of ways to keep warm and healthy. And things that come to the mind to stay warm and cosy are scarves, gloves and fireplaces. But a healthy and easy way to stay warm is to have soups. Yes, soups are easy to make and it s fun to experiment with soup recipes by adding our own twist, such as varying the types of vegetables, spices or herbs used. Do select the ingredients based on those that would strengthen the immune system & those that would tickle your taste buds. Neha Shetty, Technical head (nutrition), REDUCE, Talwalkar s shares a simple and healthy cabbage and tomato soup. Here are nutritious and filling soup recipes to comfort you this winter.

Ingredients

  • 2 tablespoons oil
  • 1/2 teaspoon cumin seed
  • 1 bay leaf
  • 6 cloves (long)
  • 1 teaspoon salt
  • 1/2 cup carrots, peeled and chopped into rounds
  • 1 small potato peeled and diced
  • 1/4 cup fresh green beans cut into 3/4-inch parts
  • 1/4 cup celery chopped
  • 1 cup cabbage chopped
  • 1-1/2 cup tomato chopped
  • 1/4 cup corn kernels
  • 3 cups of water
  • 1/4 teaspoon ground black pepper
  • 1 to 2 teaspoons freshly squeezed lemon juice

Method for preparation:

  • Heat the oil in a saucepan over medium-high heat. Test the heat by adding one cumin seed to the oil; if the seed cracks right away, the oil is ready. Add cumin seeds.
  • As the seeds start spluttering, add carrots, potatoes, green beans, bay leaf, cloves and salt.
  • Cook for two to three minutes by stirring occasionally.
  • Add corn, cabbage, celery, tomato and allow these vegetables to cook for a minute or two.
  • Now add three cups of water. When it starts to boil, turn the heat down to low or medium.
  • Cover and cook 25 to 30 minutes, until the vegetables are tender.
  • Once done, add black pepper and lemon juice.
  • Taste and season with additional salt and pepper as needed.
