One of the most common breakfast items or snacks in any Maharashtrian household is the thaalipeeth. Thaalipeeth is basically a type of a savoury pancake made with different kinds of flours and is shallow fried. Ask any of your Maharashtrian friends and they ll tell you how integral thaalipeeth is to their diet. I know that as a Maharashtrian myself. I have grown up eating my mom s delicious thaalipeeth. While the basic thaalipeeth recipe is the same throughout most Maharashtrian families, each has their own tweaks and style of making. That s why thaalipeeth won t taste the same in different Maharashtrian homes or even restaurants.

What s even better is that the thaalipeeth is highly nutritious and good for those on a weight loss diet. The flour used for making thaalipeeth, called bhajni flour in Marathi, comprises rice flour, bajra flour, besan, jowar flour, whole wheat flour, coriander seeds, jeera seeds. But the best part about thaalipeeth, anybody who truly savours it will tell you, is the dollop of white butter (loni in Marathi) that is placed over each thaalipeeth. Ingredients for bhajni

1 kg rice flour

kg jowar flour

kg bajra flour

kg besan

2 tbsp coriander

2 tbsp cumin powder

Method

Dry roast all the ingredients for about 10 minutes on low heat.

Mix them together.

Store in a cool, dry place and use within 3-4 months.

Ingredients for thaalipeeth

2 cups thaalipeeth (bhajni) flour

1 cup chopped onion

1 green chilli chopped

1 tomato chopped

Salt to taste

Oil and warm water for kneading

Oil for cooking

Method

1. Place the bhajni flour in a bowl along with the other ingredients and knead it into a small ball.

2. Place a clean piece of plastic on the kitchen platform. Spread a bit of oil on it. Oil your palms too.

3. Take a small ball of the dough and place it in the centre of the plastic. Now flatten it to make a small pancake.

4. Make a hole in the centre with your finger. This is so you can put oil in the centre for it to cook properly.

5. Now heat oil in a pan. Remove the thaalipeeth off the plastic carefully by tilting it on your other hand and removing the plastic. Place the thaalipeeth in the pan and let it cook for about 2-3 minutes on each side.

6. Serve hot with loni.
