Raise your hand if you get super strong afternoon hunger pangs. For me, snack time between 4-6 pm is usually when I crave for something spicy and tangy that will satiate my taste buds more than my hunger. I m always on the lookout for recipes that are healthy, quick to cook and tasty. The popular Gujarati snack dhokla is perfect as an afternoon snack because it ticks all the right boxes. Dhokla is made of besan or gram flour. Dhokla has a low glycemic index (it releases glucose at a more sustained rate) which makes it good for diabetics. Dhokla is usually steamed but this quick recipe by Chef Kunal Kapur uses a microwave. All you need is a mug, microwave and the dhokla ingredients to make this recipe.
Ingredients
For the dhokla
1 cup besan
cup yoghurt
1 green chilli, chopped
1 tsp ginger paste
1 tbsp sugar
tsp turmeric powder
1 tbsp oil
Salt to taste
cup water
2 tsp Eno or fruit salt
For tempering
2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 green chilli, chopped
Curry leaves
1 tsp sugar
A little water

Method
1. In a bowl, mix all the ingredients for the dhokla.
2. Pour in a cup so that the dhokla batter fills up almost of the cup.
3. Microwave on high for 2.5 to 3 minutes.
4. In a pan, heat oil and add mustard seeds. After they crackle, add cumin seeds, chilli, curry leaves, sugar and water.
5. Pour this tempering over the dhokla. Eat immediately!
