Finding the right gluten-free flour mix or gluten-free atta seems like quite a struggle. Different recipes require different flours. Besides, gluten-free flour may not be available everywhere and may be expensive. Homemade gluten-free all-purpose flour is a good way to save money and to ensure that the right amount of nutrition comes your way. Before you opt for a gluten-free diet, make sure to find out if you need to go on a gluten-free diet.
"Making DIY gluten-free flour blend costs less than you think. Making your own gluten-free flour may seem like an investment, and it may take some work to collect all the ingredients you ll need, but homemade flour blends are less expensive than the gluten-free flours sold in stores. There are many gluten-free all-purpose flours available in the market but they are extremely expensive, so it s best you find your favourite mix and stick to it," says Khushboo Verma, Founder, Gluten Free Indian.

Make sure to check and double check that the flours you re buying are free from cross-contamination. Make sure they are not processed in a facility that handles wheat or maida.

Ingredients:
Potato Starch: 1/2 cup (use potato starch and not potato flour. Potato starch will provide you with light, fluffy baked goods. Whereas flour will be hard as stone).
Tapioca Starch: 1/4 cup
White Rice Flour: 1/4 cup
Brown Rice Flour: 1 +1/2 cup
Method
Mix everything very well. Your flour blend is ready.
What all you can make with gluten-free flour
"With Gluten Free flour we can make Pancakes, muffins, cakes. The list is limitless. But you might also have to buy a packet of xanthan gum. As the name suggests this gum keeps the flour together. As you know that gluten provides elasticity and flexibility, our flours don t have gluten which means they lack the elasticity and the stickiness. The xanthan gum helps keep the flours together. I have used the gum while baking the Gluten Free bread, but haven t used it for muffins, pancakes etc. You can buy a packet and keep, helps a lot while baking the bread or making naan etc.
