Baisakhi special: Fibre-rich sweet potato pancakes

Prepared with fibre rich oats and sweet potatoes, this pancake can make for a very satiating dish.

Sweets are an indispensable part of any happy occasion in our country. Baisakhi is here which means that the aromas of the delicious delicacies will flood the kitchen. While you may want to avoid all the calorie-dense, sweet delights you can always indulge in certain low-calorie delights like this sweet potato pancakes.

Prepared with oats and sweet potato, it can be a perfect treat to your taste buds. Being high in fibre, sweet potatoes are light on your stomach. They contain natural sugars that cause a slow release of sugars into the bloodstream and thus, prevent a sudden rise in your blood sugar levels. Additionally, sweet potatoes also improve insulin sensitivity which in turn ensures your blood sugar levels remain under control. So this treat can be ideal even for diabetics.

Ingredients

  • Oats (ground) cup
  • Sweet potato (steamed and mashed) cup
  • Baking powder tsp
  • Vanilla essence tsp
  • Salt a pinch
  • Jaggery/sugar 1 tsp
  • Egg - 1
  • Skim milk cup (to form a batter)
  • Walnuts (broken into pieces) - 3
  • Raisins - 1 tbsp

Method

  • Combine all the dry ingredients except the nuts and raisins.
  • Add egg and milk to a bowl and beat it to a batter.
  • Then add the nuts and raisins to the mixture.
  • Heat a non-stick pan on medium flame and spread a little oil.
  • Then spread a spoonful of batter in the pan.
  • Cook well on both sides and serve hot topped with little honey.
