Quick and easy chicken soup for when you are down with the flu and have no energy to cook!

No one has the strength to make chicken soup when they are down with the flu. So here's a 10 minute, no-nonsense chicken soup recipe.

No one likes to be down with the flu. The cold, cough, headache, fever and an itchy throat is too much to deal with! Well, it is also the time to eat well and drink a lot of fluids to get rid of the cold and cough and feel better. And that is where my easy and quick chicken soup recipe becomes a life saver. Here's why drinking soup is a great idea!

Whenever, I am down with the flu or even when I have a cold, I drink at least two cups of this soup. And I enjoy drinking it not just because it tastes great, it actually helps get rid of cold. Hot chicken soup helps in reducing the congestion and the pepper and other spices prevent the cold from worsening. The salt in the soup also helps in killing the bacteria in case of a sore throat. Here are a few health benefits of eating chicken.

Now, you might think making chicken soup is an ordeal, but it isn't. Here's how you can make it quickly when you are sick and have no strength whatsoever.

Ingredients

  1. Chicken (100g)--Chopped into small pieces
  2. Black peppercorns--4
  3. Cinnamon stick--1 piece
  4. Ginger (one-inch piece) --finely chopped
  5. Garlic (2,3 cloves)--finely chopped
  6. Green chillies (1 or 2)--finely chopped
  7. Coriander leaves, finely chopped
  8. Salt--to taste
  9. Chicken stock cube--1

Method

Heat a pressure cooker with a teaspoon of butter in it. Add the chopped garlic, ginger, green chillies, peppercorns, cinnamon stick and chicken and stir for a few minutes until the chicken turns opaque. Add the coriander and salt. Mix well. Add 5 cups of water and one cube of chicken stock and stir. Cover the pressure cooker and cook on medium flame for at least 5 whistles or till the chicken is cooked. Serve hot.

PS--If you have the time and the strength, you can add vegetables like carrots and onions. And instead of water you can directly add vegetable or chicken broth and skip the stock cube.
