Healthy recipe for diabetics: Gavar pumpkin gravy

Cluster beans have the highest fibre content among all vegetables which in turn prevents a rapid rise in blood sugar levels after a meal. Hence, they are good for diabetics. Red pumpkin thickens the gravy and it also imparts a natural sweetness to this dish, which is delectable.

Preparation Time: 10 mins

Cooking Time: 25 mins

Serves 4

Ingredients

Cluster beans (gavarfali) cut into 1" pieces 2 cups

Red pumpkin (bhopla / kaddu), chopped 2 cups

Cumin seeds (jeera) 1 tsp

Carom seeds (ajwain) 1/2 tsp

Asafoetida (hing)1/4 tsp

Chilli powder 1 tsp

Turmeric powder (haldi)1/2 tsp

Garlic (lehsun), crushed 1 1/2 tsp

Coriander (dhania), chopped 1 tbsp

Oil 1 tsp

Salt to taste

Method

  1. Heat the oil in a non-stick pan and add the cumin seeds. When they crackle, add the ajwain and asafoetida.
  2. Add the cluster beans, pumpkin, chilli powder, turmeric powder and salt and saut for 2 to 3 minutes.
  3. Add 2 cups of water and bring to a boil.
  4. Add the garlic, cover and simmer for 20 minutes or till the cluster beans are cooked.
  5. Mash the pumpkin to make gravy and serve hot garnished with the chopped coriander.

Tips: You can also make this vegetable in a pressure cooker as cluster beans (gavarfali) take a while to cook.
