Healthy South Indian Recipes With Brown Rice

For most Indians, a satiating meal is the one where you can relish a plateful of rice without any regret or remorse. So if you are a rice lover and want to follow a healthy diet you can indulge in brown rice and eat it to your heart’s content. Even after opting for the right brown rice, we know that having the usual dal-chawal every day might sound a bit boring. But there are a variety of rice recipes that you can cook up with the healthy brown rice. Here are a few of them:

coconut rice India gateONION, COCONUT RICE

Preparation time:15 minutes

Cooking time:20 minutes

Serves: 4 people

Ingredients:

  • 2 cups brown rice: cooked;
  • 1 cup coconut: grated
  • Boiled rajma half-cup
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 2 dried red chillies
  • 1 green chilli chopped
  • 1 tsp ginger chopped
  • 1 big onion chopped
  • 1/2 tsp asafoetida
  • 5-6 curry leaves
  • Salt to taste

Method

  1. Heat the oil in a wok or kadhai and add mustard seeds, cumin seeds, curry leaves and asafoetida. Once it stops spluttering, add the chana and urad dal, green chilli, ginger and salt. Cook the mix till the dal is cooked.
  2. In a separate wok or kadhai add little oil and heat it. Add to this the chopped onions and fry on a low flame till golden brown. Remove it from the flame and keep aside.
  3. Now add the coconut to the mix and cook it till it turns brown.
  4. Add the fried onions to the mix now.
  5. Finally, add the rice and mix everything together. Add a handful of boiled rajma to the rice. Serve the coconut rice hot.

tamarind rice India gateTAMARIND RICE

Preparation time:15 minutes

Cooking time:20 minutes

Serves: 2 people

Ingredients:

  • 1 cup brown rice: cooked
  • 1/2 cup tamarind water
  • 1/2 cup sesame oil
  • 5 red chillies
  • 1 tsp fenugreek seeds
  • 1 tsp white sesame seeds
  • 2 tbsp coriander seeds
  • 1 tsp mustard seeds
  • 4 tsp urad dal
  • 4 tsp chana dal
  • 1/2 tsp asafoetida
  • 1 tsp turmeric powder
  • 5 tsp roasted peanuts
  • 5-8 curry leaves
  • Salt to taste

Method:

  1. First, dry roast three red chillies, fenugreek, sesame and coriander seeds in a pan. Grind them to a paste and keep aside.
  2. Next, heat the sesame oil in a wok or kadhai, and add the mustard seeds, curry leaves, asafoetida, turmeric, and two red chillies. Once these ingredients are tempered, add the urad and chana dal. Stir a bit and then add the tamarind water. Cook till the dal is done and the mix turns into a thick, brown paste. Add the spice mix now. Take it off the flame, and mix it gently with the cooked rice.
  3. Garnish with roasted peanuts, and serve.

tomato rice India gateTOMATO RICE

Preparation time: 15 minutes

Cooking time: 20 minutes

Serves: 4 people

Ingredients

  • 2 cups brown rice: cooked
  • 2 dried red chillies
  • 1 tsp coriander seeds
  • 1/2 tsp asafoetida
  • 1 tsp chana dal
  • 1 tsp urad dal
  • 1 tsp oil
  • 1/2 tsp mustard seeds
  • 1/2 onion chopped
  • 5-6 curry leaves
  • 2 green chillies chopped
  • 1 cup tomato puree
  • Salt to taste

Method:

  1. In a hot tawa or pan, take the red chillies, coriander seeds, asafoetida, chana dal, and urad dal, and dry roast them.
  2. Grind them to a powder in a mixer or food processor.
  3. Heat oil in a pan and add the mustard seeds, curry leaves, and green chillies. Once they stop spluttering, add the onions and sauté.
  4. Add the spice powder and tomato puree once the onions turn golden brown. Continue cooking for another ten minutes.
  5. Then add the rice and season with salt. Once the whole dish dries out, serve it.
